OK, I'm sticking my neck out here...my roast was dry. It was chewy. It had great flavor though. I used a rump roast, not chuck and it was a 3lb roast. We added mushrooms at the end but not sour cream or the wine I originally discussed. Anyone else have this? It was edible but my son didn't finish his helping. What went wrong?
Rump roast has just about no marbling, and if it wasn't at least Choice, then that's even worse. Chuck is the correct cut for pot roast, and don't cut any fat off before cooking!
Try the chuck next time, and you'll see a huge difference...make sure it's Choice and NOT Select!
