Nah...fat won't kill you. It's wheat and sugar (white carbs) that will kill you. We didn't use noodles or taters. We used mashed cauliflower.
We added carrots, green beans and onions at the last hour. YUMMAY!
And for those who don't think this is OBX related...please think about all the threads that ask, "What do you cook on vacation?" and here is one simple, delicious, can't mess up recipe for big crowds.

I used the wrong cut of roast - I used 'spensive' stuff and though it is still delicious, I think a cheaper cut of meat would have been BETTER.
I went with total cost for the experiment, though, and bought a more-per-pound-butcheaper-total roast.
I told the butcher at the store about this recipe and asked him what the cheapest cut for a roast would be and he said for sure it was a chuck roast. Which wasn't really "cheap"...nothing is.
