Leftover ham




Happy New Year!

Ham balls? Ever heard of these? We had a nice crowd for Christmas Eve this year so I bought an extra half ham to cover the five extra out-of-towners we invited for dinner.

To make a long story short, we had ham leftover so there was chit chat about what ways to use it up during kitchen clean-up. One girl said she loves Iowa hams balls... wait, what's that?

On Friday afternoon, she came back and made these for our dinner. These are simple to make. The hardest part is grinding the ham. At home, she can buy ground ham in her grocery store. Actually, the hardest part is smelling these things baking for an hour and a half. Smoky, salty, sweet, sticky, savory and sour.

Just finished grinding the last of the ham to make some for tonight and a bunch more to freeze.

I actually have some ground ham in freezer.
The Amish market here sells it. I’ve made ham loaf with it.

This brings back memories from when I was a kid. Our leftover ham was diced up for ham salad. Same process as chicken/tuna salad. Ham, Dukes, celery, pickle. Great on a sandwich made with homemade white bread.

11.5lbs. The mix smells good enough to eat right now, but there's raw pork in there. Into the fridge for a few hours whilst we continue to pack away the Christmas decorations.

Oh wow! I haven’t had ham salad in years!
We always put chopped up hard boiled egg in it along with the things you mentioned. (Although sometimes used sweet relish instead of pickle)
Gonna have to make some!

Ham salad is good stuff, Lolly. I like it with sweet relish or chopped bread and butter pickles that are made with red peppers and onions. Another favorite way to use up ham is deviled ham spread or scalloped potatoes with ham.

Oh gosh! They looked yummy! My son has a grinder for his deer meat and puts hamburger meat in there with it to make stuff. We bought him a freezer a couple of years ago for Christmas for his game to keep it sequestered from his other stuff. He's like you and makes things with his duck, other birds and deer and invites people over to imbibe. Just like you.

Grind up a few pieces of bacon with it. We bake with a glaze of brown sugar, mustard, vinegar and a touch of water to make it “basteable”. Yummy!

Ahhh, bacon. Ok, I will give that a try next time. She made the glaze the same way so that sounds like the same recipe. The only difference is I don't keep brown sugar on hand because it hardens. But I have molasses and white sugar which is the same thing.

Snow coming in tonight. I figured that would be a good time to run a pot of Great Northerns. Went to Kroger to get a few carrots, crowded, kinda like Times Square on New Year's Eve. Now when I finally got home, I found out that I was out of leftover ham. Oh well, I believe I have a couple of pork chops in the freezer. That will have to do. No more Kroger tonight.

It's like this....I used the smoked sausage a couple days ago in a stir-fry. The only bacon i have ( I'm ashamed to say) is turkey bacon, ugh. The bride sent me back to the store for milk and bread, eggs, but i went to the ABC store instead. She'll get over it. Let it snow.

I fixed a pot of beans at the fire station and seasoned it with a pack of el cheapo hot dogs. The guys loved it. But they would eat anything. I believe they were kin to beavers...I bet they would eat tree bark.
