Mines in the pot as I write this. The only mistake was I thought I had unsalted butter but all I had was salted. After about 5 hours, I opened it to add carrots and potatos. Can't wait until it's done, smells soo good.

I laugh every time I visit this Board and see this thread still active.

As to the peppers: I left it out of mine. I then visited a Boardie who used them, and it was BETTER with them!

The mushrooms, taters, carrots, etc: yes. Add them. It doesn't hurt, and they end up tasting great too! And flipping the roast at some point is not a bad idea. The trick is to not get fooled and think it is DONE after three or four hours. It will LOOK done but it is not - let it go A LONG TIME to get maximum breakdown of the meat into true tenderness.

Not being a cook of note, I'm shocked a found a recipe people actually like. Shall I tell you about the BUTTER PASTE CURRY? OMG....

Well we had a our second roast today! We added carrots this time, this is the only thing we changed or added. It was every bit as good this time as it was the last. We also got my daughter's crock pot and did one for her as well, hers was awesome too. This has the best taste and I know that we will not have a beef roast any other way now! Thumbs up

I made a mistake and cooked it on high but it was still very good and tasty too!!

It turned out great other than being just a tad saltier than I like. I added corn starch and sour cream at the end.
I heard hubby, who was talking to his mother tonight, telling her about this great roast I made today.
I will make at again with unsalted butter next time.

Kitchens of India, Paste for Butter Chicken Curry: it's all you need to make GREAT, easy chicken curry. Just follow the package instructions. Which is basically paste, water and chicken in a pan!

We do it with boneless thighs from Costco, and we add a couple of cans of green beans (yes, canned!) and some canned carrots too. You are looking for easy right?

You can double or triple this, and though it cooks in a pan, I make it early and transfer to a crockpot so I'm not rushing around at dinner.

Don't be fooled by the JARS of this stuff on the shelf near it. The paste is the best. Harris Teeter carries it.

I did the same thing.except for the sour cream & corn starch....it was too salty for me too. The other thing I did this time was use a smaller chuck roast and I think the pkgs of au juice and hidden valley ranch powder plus the salted butter were just too much....I only used a 1/2 stick of butter too. The first time I made it I used a 4 lb roast....this time I cut it in half and it was just too small & salty....even with potatoes & carrots. (still good though!)

Our 2nd & 3rd if you count my daughter's that we fixed was a bigger roast and was better I think..hubby made a small amt of gravy from the drippings and it was awesome!

It's funny because I never buy salted butter, I must've grabbed one by mistake. The roast was about 4 lbs. We finished it off tonight. So good.

We did ours last weekend. Covered with mushrooms and onions on top of the butter. Although it did not fall completely apart, most of it did. OMG good!!!! And the drippings went great with mashed potatoes on Sunday and as a hot roast beast sandwich on Monday.

Now give me a 7 hour corned beef for St. Patty's Day Lucky

This turned out better than I expected !Good rich beefy flavor and tender meat.I think it would best be served over egg noodles.Thanks this is my go to from now on !I would cook the veggies separate though.

I added carrots and cut up potato's but I waited until after about 5 hours had passed. By the time the carrots and potato's were done, the roast was done too. It was a little more than 8 hours. I also added an onion at the beginning.

I don't why you need a whole stick of butter,I used a half a stick and it was fine.....Make sure to skim the fat off I got over a half a cup of fat out this.This was still very good!

Doing this today with a 2" thk 2-lb Rockfish filet just the size of the cooker. Skin side down, Cajun/Old Bay/Lemon pepper and vinagrette, half stick of butter. Figure 2 hours for the fish. Will advise. Should be a good stew.

Mine's in the crockpot right now! smiley They didn't have any of the Ranch packets left at the Teeter (apparently everyone's making this..haha.) so I'm trying it with the Garlic & Herb seasoning...smiley

Did ya ever put your left over pot roast in the refrigerator and take it out the next day...the gravvy (juice) has a thick hard coating which is the hardened butter.!!! If you are watching your diet (cholesterol) you can just pick it off....but then why put it on in the first place??? I'll only be using a 1/2 stick from now on and maybe not even that. Anyone do it without butter at all??

I didn't use a roast but did chicken breasts, carrots, onions, potatoes, and the seasonings but left out the butter. It was really good that way. I would try a roast without the butter too.

Butter is not your enemy. Fat is needed for the body to process certain vitamins, etc. The worst thing that ever happened to this country was 'fat-free'... Thumbs down

Use Chicken broth or wine for moisture. you can add your own herbs and spices rather than use the packaged crap which is mostly salt and chemicals.

Turned out light and flaky, great spice flavor, good drippings for the biscuits. Served with cheesy hash browns. 2 hrs was 'bout right. Fish Fish
